Italian Style "PLT"
- 2 Tbsp pesto sauce
- 2 Tbsp mayonnaise
- 1 tsp lemon juice
- 2 ciabatta rolls
- 4–6 slices prosciutto
- 2 slices fresh mozzarella cheese
- 4 lettuce leaves
- Thin slices of tomato
- In a small bowl, whisk the pesto, mayonnaise, and lemon juice.
- Toast the ciabatta rolls if desired and spread with pesto mixture.
- Layer on prosciutto, mozzarella, lettuce, and tomato. Slice each sandwich in half and wrap ’em up!

Tip: Teach kids about nutrition by including them in all aspects of meal prep, from planning to eating!
Pinwheels | Spread a flour tortilla with Dijon mustard. Arrange sliced turkey and shredded cheese in center. Top with grated carrots and chopped cucumber. Roll up and cut into pinwheels.
Soup to Go | Fill a thermos with a favorite veggie soup from the deli section of your grocery store. Pack with Kashi’s Heart to Heart Whole Grain Crackers spread with peanut butter.
Mediterranean Melody | Kids love anything they can dip! Forgo the typical sandwich for hummus with pita wedges and raw veggies. Buy all three prepackaged, if you like.
Fruit Sandy | Here’s a sweet treat you can really get behind: Mix a little apricot jam into low-fat mayonnaise and spread on whole-wheat bread. Layer with turkey, slices of apple, and lettuce.
