Eats For the Week: New Brown Bag Lunch Ideas

Italian Style "PLT"

Ingredients:

  • 2 Tbsp pesto sauce 
  • 2 Tbsp mayonnaise 
  • 1 tsp lemon juice 
  • 2 ciabatta rolls 
  • 4–6 slices prosciutto 
  • 2 slices fresh mozzarella cheese 
  • 4 lettuce leaves 
  • Thin slices of tomato 
  1. In a small bowl, whisk the pesto, mayonnaise, and lemon juice.
  2. Toast the ciabatta rolls if desired and spread with pesto mixture.
  3. Layer on prosciutto, mozzarella, lettuce, and tomato. Slice each sandwich in half and wrap ’em up!

Makes 2 servings

Tip: Teach kids about nutrition by including them in all aspects of meal prep, from planning to eating!

Pinwheels | Spread a flour tortilla with Dijon mustard. Arrange sliced turkey and shredded cheese in center. Top with grated carrots and chopped cucumber. Roll up and cut into pinwheels.
