Meals In Minutes: Healthier Lunches

Lunch of the Month

Tuna Tortilla Pinwheels
Serves 4 | Total Time: 10 min

1 pouch chunk light tuna
1/4 cup shredded cheddar cheese
1/4 cup mayonnaise
2 Tbsp relish
Shredded carrots
4 tortillas

  1. Put all ingredients except tortillas in a small bowl and stir to combine.
  2. Spread mixture onto tortillas. Roll up tightly and slice into pinwheels.

Side Note: Apple chips make a great snack. Core apples and slice thinly. Place on a parchment-lined pan and sprinkle with cinnamon. Bake at 200°F for 3 hours. Remove from cookie sheet to cool. Apples will crisp up as they cool. Add a new Bars for Kids by Odwalla and Honest Fizz by Honest Tea and lunch is done!
