No-Bake Cocoa Balls
Makes about 10 cookies
1 cup pitted dates (about 22)
2 Tbsp unsweetened cocoa powder
½ tsp almond extract
½ cup puffed rice cereal
Confectioners’ sugar and/or superfne sugar, for rolling (optional)
1. Pulse dates, cocoa powder, and almond extract in a food processor until the mixture pulls away from the sides and forms a ball.
2. Add rice cereal and pulse until just combined.
3. Roll the mixture into 1-inch balls with damp hands, then roll in sugar, if desired.
