Pancakes

Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
1 tablespoon white sugar
1 egg
1/2 cup plain yogurt
1/2 cup milk
2 tablespoons vegetable oil
3/4 cup fresh blueberries

Directions

1 Preheat griddle over medium heat. Stir together the flour, baking powder, nutmeg, cinnamon and sugar, set aside.
2 In a medium bowl, stir together the egg, yogurt, milk and oil. Gradually stir in the flour mixture, then fold in the blueberries.
3 Pour batter onto hot greased griddle, two tablespoons at a time. Cook over medium heat until bubbles pop and stay open, then turn over and cook on the other side until golden.

Banana Breakfast Shake

Ingredients
1 banana, sliced
3/4 cup crushed ice
1/4 cup water or soy milk
3 scoops vanilla or fruit flavoured ice-soy (vegan ice cream)
Vegetable Protein powder according to instructions on package
Vitamin powders according to instructions on package

Directions

1 Put everything in a blender. Be sure ice is crushed before blending.
2 Blend until smooth.



Soy-alicious Shake (NOT!)

Ingredients
1 cup of soy milk (So Good is the one I use)
1 tsp jam (I use a type (President's Choice)that is mostly berries)
1 tsp carob powder
1 banana
2 ice cubes

Directions

Blend together in a food processor blender until smooth. Approximately about 200 calories and provides your soy requirements for the day. (So Good has 60mg of soy isoflavones per cup).




Wake-me-up! Breakfast Shake

Ingredients
8-9 oz. Orange or Apple Juice (I bet any would do)
2 carrots -washed
1 good handful of parsley-washed
1/2 chunk of Mori-Nu Silken Tofu (go ahead and put the whole thing in if you dare!)
1 banana (it really helps to peel it first :^)
1 teaspoon of spirulina or chorella algae

Directions

1 Pour the juice into a blender.
2 Chop the carrots (unless you have a monster-blender!) and add to the blender.
3 Add parsley.
4 Blend on low until the "groaning" gets softer. Then set your blender to highest setting.
5 Once the blender is running smoothly, add your mornu to the mixture. Add the banana and the spirulina. Blend for a bit longer and you're done! Enjoy...

 
Brownies

Ingredients
1/2 cup butter, melted
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
3 tablespoons butter
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar

Directions

1 Preheat oven to 350 degrees F (175 degrees C).
2 Melt 1/2 cup butter. Remove from heat. Stir in sugar, eggs, 1 teaspoon vanilla. Mix well.
3 Add in 1/3 cup cocoa, 1/2 cup flour, salt, baking powder. Mix well. Spread batter into one 8x8 square baking pan.
4 Bake for 25 - 33 minutes.
5 To Make Frosting: Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla and 1 cup confectioners' sugar. Frost brownies while they are still warm.




Chocolate Chip Cookies

Ingredients
1 cup butter flavored shortening
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
2 teaspoons Mexican vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups milk chocolate chips

Directions

1 Preheat oven to 350 degrees. Grease cookie sheets.
2 In a large bowl, cream together the butter flavored shortening, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Combine the flour, baking soda and salt; gradually stir into the creamed mixture. Finally, fold in the chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.
3 Bake for 8 to 10 minutes in the preheated oven, until light brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
