I'm Thankful for Fast and Easy Sweet Potato Recipes!

    This Thanksgiving I'm especially grateful for:

    1. Teachers who treat the children in their classrooms like their own children.

    2. Teachers who make the time to discover the hidden talents of each of their students.

    3. Administrators who "handle" local and national politics so teachers can focus on what really matters.

    4. The spouses who put up with these busy teachers.

    5. And the shared wisdom of mothers and grandmothers that makes teaching and raising a family look easy.

    Special thanks to my mother for sharing her Twice-baked Sweet Potato Recipe for busy teachers. It's a great side dish for poultry or ham!      

    Ingredients:           

    3 sweet potatoes (about 3 cups, cooked and softened)

    ½ cup light brown sugar (or sweeten to taste)

    ½ cup butter

    ½ teaspoon vanilla

    ½ teaspoon cinnamon

    pinch of cloves

    lots of marshmallows

     

    Directions:

    1. In a large stockpot, cover sweet potatoes with water and boil for 20 minutes or until fork-tender.

    2. Drain, cool and push soft potatoes easily out of the skins.

    3. Preheat oven to 350 degrees. Pour combined mixture (potatoes, sugar, spices, and butter) into a lightly buttered casserole dish. Bake for 20 minutes. Remove from oven, sprinkle marshmallows on top and return to oven for 3 to 5 minutes or until marshmallows are lightly toasted.
