Weeknight Recipes: Pretzel Chicken Nuggets & Sweet Potato Oven Fries

Weeknight Recipes: Pretzel Chicken Nuggets & Sweet Potato Oven Fries

Ingredients

FOR THE CHICKEN

  • Cooking spray
  • 1 cup mini pretzels
  • 1 tsp garlic powder
  • ½ cup grated Parmesan
  • ½ cup flour
  • Kosher salt and black pepper
  • 2 eggs, beaten
  • 1 lb chicken breast, cut into 2-inch pieces
  • Mustard, for dipping

FOR THE FRIES

  • 2 sweet potatoes, peeled
  • 1 egg white, beaten
  • ½ tsp sweet smoked paprika
  • ½ tsp kosher salt

Directions

1. Preheat oven to 400?F and coat two foil-lined baking sheets with cooking spray. Combine pretzels, garlic powder, and Parmesan in a food processor and pulse until coarsely ground. Spread mixture in a shallow dish. Pour flour in a separate dish and season with a generous pinch of salt and pepper. Put beaten eggs in a third dish.

2. A few pieces at a time, dredge chicken in the flour, egg, and pretzel crumbs (in that order). Spread nuggets on a prepared baking sheet, and repeat with remaining chicken; refrigerate while you prepare fries.

3. Slice potatoes into fries. Beat egg white in a bowl until frothy; add fries and toss to coat. Sprinkle with paprika and salt; toss again. Spread fries in a single layer on the second prepared baking sheet.

4. Transfer chicken and fries to oven. Bake until chicken is cooked and fries are golden and starting to crisp, turning both halfway through, about 30 minutes total. Serve with mustard for dipping.
