Eating the same thing every day can get seriously boring. Think outside the loaf with these ideas:
Use a veggie vessel. Split an avocado in half and discard the pit. Fill the hole with tuna salad (you can buy the prepared stuff from the deli section). Wrap tightly in plastic wrap and drop a spoon in his bag for easy eating! Another option: Cut a cucumber lengthwise and scoop the seeds out with a spoon. Fill with cream cheese, cottage cheese, or hummus.
Stock up on packaged goods. Pair a few carefully chosen supermarket finds to make a lunch, no assembly required! Look for packaged cheese cubes, triangles, or sticks, and send with crackers. Satisfy a sweet tooth with yogurt or cottage cheese singles matched with diced fruit cups (packed in juice, not syrup).
Reinvent leftovers. Wash extra salad greens at dinner and toss with extra chopped meat, dried cranberries, and almonds. Or cut last night’s chicken into “nuggets” and send with a side of ketchup.
