Meals In Minutes: Make-Ahead Breakfasts

Baked Banana Oatmeal
Serves 4 | Total Time: 30 min

4 1/2 cups quick-cooking oats
3/4 cup brown sugar
1 1/2 cups milk
3 Tbsp butter, melted
3 eggs
3 tsp baking powder
1 tsp salt
2 tsp vanilla
1 1/4 cups mashed ripe banana (about 4 bananas)
1/4 cup chocolate chips (if desired)

1. Preheat oven to 350°F.
2. In a large bowl, mix all ingredients and stir until well combined.
3. Spread in greased ramekins or 9” x 13” baking pan.
4. Bake for 20 minutes for ramekins or 25 minutes for pan.
5. Reheat in the morning and serve with warm milk on top.


Breakfast in a Minute

Simple Smoothies

Egg Wrap
Scramble eggs in a greased bowl and microwave on high for a minute or until cooked. Wrap them in a tortilla with some shredded cheese.

Cereal Breakfast Bar
Before you go to bed, set out a box or two of cereal (we like Kashi’s Berry Fruitful), cups, bowls, and spoons for everyone. In the morning, just add milk. No decision making required.

Breakfast in a Bag
In a little sandwich bag, combine cereal, your child’s favorite dried fruit, and walnuts. Shake it up!
