Ingredients:
- 2 cups jumbo rolled oats
- 1 1/2 cup slivered almonds
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1 tsp ground ginger
- 1 pinch of salt
- 3 1/2 Tbsp butter
- 5–6 Tbsp honey
- 1 large orange rind, grated
- 1/2 cup dried cranberries
- Nonstick cooking spray
Preparation:
1. Heat oven to 350°F.
2. In a large bowl, mix together oats, almonds, pumpkin seeds, sunflower seeds, ginger, and a pinch of salt.
3. Melt butter with honey, then add the grated rind of the orange. Mix together. Pour over the oat mixture and stir.
4. Spread the mixture on a baking sheet and bake for 15 to 20 minutes until golden brown, giving it a stir every 5 minutes to ensure it colors evenly. Let cool, then stir in dried cranberries.
