- 1½ cups orzo
- 1 cup frozen peas
- 4 slices bacon, chopped
- 2 Tbsp flour
- 1½ cups whole milk
- ¾ cup shredded
- cheddar cheese
- ½ cup shredded
- Parmesan cheese
- Black pepper, to taste
1. Bring a large pot of salted water to a boil. Cook orzo according to package directions, adding peas during the last 4 minutes; drain and set aside.
2. Meanwhile, cook bacon in a large saucepan over medium-high heat until crisp, about 8 minutes. Using a slotted spoon, remove bacon to a paper towel–lined plate.
3. Whisk flour into the bacon drippings over medium heat. Slowly pour in milk, whisking constantly, until the liquid begins to simmer. Continue to cook, whisking occasionally, until thickened. Remove from the heat and stir in the cheeses; season with salt and pepper. Add the orzo to the sauce and toss. Divide among bowls and top with the bacon.
