Ingredients
- Olive oil cooking spray
- 1 14-oz package extra firm tofu
- ¼ cup mayonnaise
- 2 Tbsp yellow mustard
- 1¼ cups whole-wheat panko
- bread crumbs
- 1 tsp salt
- ½ tsp freshly ground
- black pepper
- ½ tsp garlic powder
- 2 Tbsp fresh parsley, minced
- sauce for dipping
Directions
1. Position racks in the lower and upper thirds of the oven; preheat to 400ºF. Line baking sheet with foil; coat with cooking spray. Pat tofu dry. Slice into tenders; pat dry.
2. Combine mayonnaise and mustard in a bowl. Place panko in another bowl and season with salt, pepper, garlic powder and parsley.
3. Dip tenders in mayonnaise mixture and toss in crumbs to coat. Transfer to baking sheet; mist with cooking spray. Bake on the lower rack for 10 minutes, then on the upper rack for 10 more minutes. Serve with your choice of sauce.
