A breakfast that cooks up while you sleep may sound like a dream, but these dishes make it a reality. At night, coat the inside of your slow cooker with cooking spray. Then, just add the ingredients for the recipe you choose. Cook on low for 8 hours. In the a.m., stir several times and let cool for at least 5 minutes before serving. Each recipe makes four to six servings.

Maple Walnut Apple Oatmeal
4 cups water
1 cup steel-cut oats
¼ tsp salt
¼ cup maple syrup
1 tsp vanilla
2 apples, cut in ½" pieces
½ cup chopped walnuts (stir these in right before serving)
 
Peach Cobbler Porridge
4 cups water
2 cups frozen peach slices
1 cup steel-cut oats
¼ cup brown sugar
1 tsp vanilla
¼ tsp cinnamon
¼ tsp salt
1/8 tsp nutmeg
 
Breakfast Quinoa with Dried Apricots and Figs
4 cups water
1 cup quinoa
½ cup dried apricots, thinly sliced
¼ cup dried figs, chopped
¼ cup honey
¼ tsp salt
 
Banana Coconut Rice Porridge
1 cup long-grain brown rice
2 (11-oz) boxes unsweetened coconut water
2 ¼ cups unsweetened almond coconut milk
2 bananas, sliced
¼ cup brown sugar
 
Polenta Berry Porridge
4 cups 1% milk
1 cup polenta
2 cups frozen mixed berries
1/3 cup sugar 
¼ tsp salt
