Is the Biggest, Best Snowman lesson appropriate for a demo lesson (interview)?

I would think so! For an interview, I would make sure to tie it to your state's standards, and possibly do a mini comprehension lesson, perhaps on sequence. You may also wish to pull out more with adjectives, in that, you would have a follow up activity or worksheet on them. If you have a Printable subscription there are tons of worksheets to use:
