Rice and Pasta Salads for Kids

These colorful salad recipes from Annabel Karmel introduce new flavors while packing loads of vitamins and energy.

Pasta Salad with Annabel's Dressing



  • 1/2 small onion, finely chopped
  • 1/4 cup vegetable oil
  • 1 1/2 Tbsp rice wine vinegar
  • 1 Tbsp soy sauce
  • 1 Tbsp chopped celery
  • Scant tsp finely chopped fresh ginger root
  • 1 Tbsp water
  • 1 1/2 tsp tomato paste
  • 1 1/2 tsp superfine sugar
  • 1 1/2 tsp lemon juice
  • Salt and freshly ground black pepper

Pasta Salad:

  • 5 oz pasta shapes
  • 1 carrot, peeled and cut into thin strips
  • 1/2 cup topped and tailed green beans
  • 6 small cherry tomatoes, halved
  • 1/2 cup canned corn
  • 1 small skinless, boneless cooked chicken breast

What to do:

  1. To make the dressing, combine all ingredients in a food processor and blend until smooth.
  2. For pasta, bring a saucepan of lightly salted water to a boil and cook the pasta according to the package directions.
  3. Put the carrot and green beans in a steamer (two-tiered if possible) for about 5 minutes until cooked. Drain the pasta and mix it together with the carrot, beans, tomatoes, corn, and chicken. Toss with half a cup of the salad dressing.
