Rice and Pasta Salads for Kids

Turkey Pasta Salad


  • 8 oz fusilli pasta
  • 2/3 cup broccoli
  • 3/4 cup halved cherry tomatoes
  • 1 cup canned corn
  • 4 oz cooked turkey, chopped into small pieces
  • 3 scallions, finely sliced


  • 5 Tbsp light olive oil
  • 2 Tbsp soy sauce
  • 1 1/2 Tbsp honey
  • 1 1/2 Tbsp lemon juice
  • Freshly ground black pepper

What to do:

  1. Cook the pasta according to the package directions.
  2. Steam the broccoli for 3 to 4 minutes or blanch in lightly salted water for a couple of minutes.
  3. Whisk together the dressing ingredients in a small bowl.
  4. Drain the pasta; place in a large bowl; and combine it with the broccoli, cherry tomatoes, corn, turkey, and scallions. Toss with the dressing and serve.
