Mini pizzas. Stir in a touch of tomato sauce and shredded mozzarella cheese while your eggs are cooking. Serve the eggs atop toasted English muffin halves. Add favorite pizza toppings like fresh basil or onions.
Curry in a hurry. Before you whisk the eggs, add a dash each of salt, pepper, and curry powder. Toss in a handful of thawed frozen peas, cook all together, and serve over rice.
Southwest flair. Mix a few spoonfuls of salsa and a sprinkling of shredded cheddar or Colby cheese into the eggs while they’re cooking. Serve in small soft tortillas or taco shells and top with chopped avocado.
Savory pocket. Cut a pita in half so that you have two pockets. Spread hummus in each and add scrambled eggs, chopped tomato, and feta cheese.
