Store your unpeeled Easter Eggs in the fridge, and you've got about one week to use them up. Time to get crackin':
1. Make Savory Scotch Eggs
Mold a breakfast-sausage patty around a peeled hard-boiled egg. Heat a non-stick pan to medium-high heat and brown the sausage on all sides. Drain on paper towels, cut in half and serve immediately with breakfast.

Try them with tuna salad, turkey, ham, chicken salad, or roast beef and Swiss.
3. Be a Devil
Peel hard-boiled eggs, slice lengthwise and remove the yolks to a bowl. Add mayo (about 1 Tbsp per 4 egg yolks), a squirt of mustard, salt and pepper to taste. Refill the egg whites, sprinkle with paprika and serve.
4. Spike Your Salads
Add crumbled or diced hard-boiled eggs to your favorite creamy salad recipes. They're great with potato salad, shrimp salad, macaroni salad, tuna salad, chicken salad, and coleslaw.
5. Whip Up a Mini Pizza
Top a toasted English muffin with a slice of tomato, sliced hard-boiled egg, shredded mozzarella cheese, salt and pepper. Broil on low for 3 to 5 minutes or until cheese is melted.
6. Dip In
Remove the yolks from hard-boiled eggs (save the whites for another dish). Mash the yolks with 1 avocado until smooth, add salt, pepper and a squeeze of lime juice. Serve with chips or use as a sandwich spread.

Add a boost of protein to your favorite cookie recipe with finely diced hard-boiled eggs (about 2 eggs per batch). Don’t worry – none of that hard-boiled egg flavor will remain after baking. Suggested pairings: chocolate chip, peanut butter, and oatmeal.
8. Make Magical Meatloaf
Add 2 to 3 whole hard-boiled eggs to the middle of a meatloaf before cooking (eggs should be completely encased). Cook according to directions, then slice to reveal the eggs in the center.

Slice hard-boiled eggs and place in a layer on one half of a flour tortilla. Sprinkle liberally with shredded Colby-Jack cheese; fold in half. Toast in the oven or in a pan over medium heat until cheese is melted, about three minutes per side. Serve with salsa and guacamole for dipping.

Add two finely diced hard-boiled eggs, ½ cup shredded Cheddar cheese, 1 tsp chopped chives and finely crumbled pre-cooked bacon to your favorite buttermilk muffin mix (like Jiffy or Bisquick). Fill the sections of a greased muffin pan half full and bake at 400°F for 13 to 18 minutes or until a toothpick inserted in the center of the muffin comes out clean.
