Soup It Up
Drain and rinse a can of white beans. Puree them with 1 head of steamed broccoli and 2 cans vegetable broth. Pour into a pot and warm over medium-high heat until heated through. Season with salt and pepper.
Add Some Crunch
Mix raisins, shredded carrots, and walnuts with a bag of broccoli slaw. Dress with 2 tablespoons plain Greek yogurt, 1 teaspoon honey, 1 teaspoon apple cider vinegar, 1 teaspoon whole-grain mustard, and salt and pepper.
Go Beyond Take Out
Coat strips of thinly sliced beef with cornstarch, salt, and pepper. Heat 2 tablespoons of vegetable oil over high heat and fry meat until golden brown. Remove the beef to drain. Stir fry 1 head steamed, chopped broccoli florets, 1 clove crushed garlic, 1 teaspoon grated ginger, ¼ cup soy sauce, and ¼ cup orange juice. Heat through until sauce has thickened. Mix in meat and serve over rice.
Combine 1 package prepared tortellini with 1 head steamed, chopped broccoli florets and 1 jar low-fat Alfredo or vodka sauce. Pour mixture into a 9" x 9" baking dish coated with cooking spray. Top with bread crumbs and sprinkle with Parmesan cheese. Bake at 400°F for 20 to 30 minutes.
Mix It With Potatoes
Scoop out the flesh of two halves of a baked potato. Combine with a ranch-dressing seasoning packet and steamed broccoli florets. Refill the skins with the mixture and top with shredded mozzarella cheese. Broil until cheese is melted.
Fry It Up
Combine 1 head chopped, steamed broccoli with 1 cup bread crumbs, 1 egg, and ¼ cup shredded Parmesan. Form into patties and fry over medium heat, about 2 minutes per side.
Whip It into a Sauce
Pulse 1 head steamed broccoli with 6 to 7 large basil leaves, ¼ cup Parmesan, and ¼ cup olive oil in a food processor until combined but grainy. Season with salt and pepper and serve over your kids’ favorite pasta.
Make an Egg Bake
Combine one 16-ounce carton of prepared eggs (or egg substitute) with 1 head chopped, steamed broccoli; chopped ham; and shredded Cheddar cheese. Season with salt and pepper. Pour into a greased 9" x 12" pan. Bake at 400°F, covered, for 50 minutes, or until a toothpick you insert comes out clean.
Prepare boxed cornbread mix as directed on the package. Stir in chopped, steamed broccoli and a can of rinsed corn kernels. Bake as directed or until a toothpick inserted in the center comes out clean.
