A craft inspired by Early Sunday Morning:
The Pearl Harbor Diary of Amber Billows, Hawaii, 1941


This traditional Hawaiian bread might have been something Amber’s Mother would have served with tea for a guest. Make some Mango bread for you and your friends, and transport yourself right to the shores of Hawaii!

INGREDIENTS:

2 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1 1/4 cup sugar
3/4 cup vegetable oil
1 tsp vanilla
1/2 cup raisins
1/2 cup chopped walnuts
2 cups diced ripe mango
3 whole eggs

* Make sure to get a grown-up's permission to use the oven!

DIRECTIONS:
Preheat oven to 350º. Grease a 9x5 inch pan, or 4 mini loaf pans, with butter or shortening. In large mixing bowl, sift together the dry ingredients (flour, baking soda, cinnamon, salt and sugar). Beat the eggs. Add the oil to the dry ingredients and mix; then mix in eggs and vanilla. Add nuts and raisins, then fold in mango. Pour batter into prepared pan(s). Bake at 350º for 1 hour or until a toothpick inserted in the center comes out clean. (4 mini loaf pans take about 45 minutes.)
