A craft inspired by Dreams in the Golden Country:
The Diary of Zipporah Feldman, a Jewish Immigrant Girl, New York City, 1903


Religion was deeply important to the Russian Jewish immigrants, and every week there was a celebration of the weekly Sabbath. These cookies were often baked for these special occasions and enjoyed by all. Make them for family and friends and have a taste of American history!

INGREDIENTS:

4 cups all-purpose flour
1/4 teaspoon salt
1 cup sugar
2 teaspoons baking powder
3 eggs
1 teaspoon vanilla
1/3 cup butter
1/3 cup orange juice
Flour for rolling dough
Your favorite filling (like apricot or raspberry!)

 

DIRECTIONS:

  1. Pre-heat oven to 350 degrees.
  2. Sift flour, salt, and baking powder.
  3. Cream butter and sugar.
  4. Slowly add vanilla, eggs, and orange juice to butter and sugar mixture. Add dry ingredients.
  5. Knead dough until smooth.
  6. Roll out dough with rolling pin on floured surface until 1/4" thick.
  7. Use cookie cutter to make circles of dough.
  8. Place 1 teaspoon of filling in the center of the circle.
  9. Fold up sides one at a time to make a triangle.
  10. Pinch the sides together so that they stay.
  11. Bake for about 20 minutes or until lightly browned. Makes about 3 dozen. Enjoy!
